Food: Thai papaya salad


Have no idea, I am so into Thai food these days...especially Thai green papaya salad.  I wanted to make  Thai papaya salad for a long time...

My craving won...I got to have Thai papaya salad...after doing some recipes - searching, I was surprised to know how easy this dish is...

Thai papaya salad (Vegan)

Green papaya (try to find the harder one, I found green papaya, 
and Thai red/green chili peppers in Asian supermarket)
carrot
garlic
Thai spicy red/green chili peppers
cherry tomatoes
Juice from one lime
green beans
peanuts
Juice from 1/2 lemon
"fish sauce" (I use Bragg fluid aminos, onion powder, 
Bragg organic sea kelp delight seasoning, and a little brown sugar)


Smash garlic and Thai red/green pepper
add and smash peanuts, green beans, cherry tomatoes, "fish sauce"...

stir in shredded green papaya, and carrot...mix well.

Set aside and let it cool for 2-3 hours...

Food: Fruit jam cookies


I am not a big fan of cookies any more...used to be though...

I bet, it is tasty...load with lots sugar, and butter - which I don't use in cooking. Don't know why, after adopting the plant based diet, I am no longer craving for sweet...

and I want Mika to avoid sweet...or at least when he is this young...sorry, my dear, no this kinda sweet for you...but, mama will make you banana chocolate ice cream (post coming soon)

Food: Baked black bean veggie burger

Once in a while, I want a burger...

I know, Super Bowl sunday is still couple days away...but, I can't wait that long...I am craving for a burger...and today is the day...black bean veggie burger is calling...

Baked black bean veggie burger

Black bean (cooked or canned), carrots, onion, Lunberg organic brown rice cake, oatmeal (or brown rice flour), almond milk, dried apricot, oregano and paprika


Directions:
Preheat the oven to 375 degrees F (about 190 degrees C)

mash black bean with a fork (roughly)

 in food processor, chop onion (roughly). Then stir in mashed black beans.

 add shred carrots, oatmeal/brown rice flour, almond milk.  Mix all together.

Stir in ketchup (I love Annie's Naturals Organic Ketchup), mustard sauce (Westbrae Natural Stoneground mustard), garlic powder, onion powder, black pepper, paprika, and chili powder if spicy is preferred. Mix well.

Add brown rice cake (break into small pieces), and dried apricot (cut into small pieces)...again, stir very well...

divide mixture into 8 small patties

Place patties on baking sheet, and bake till hot, golden and crisp on each side...



Yummy...and Mika loves black bean veggie burger too...that makes me very happy...maybe we will have burger again on Super Bowl sunday....

Food: Eggplant and kale stir-fry


I was super hungry...the weather was cold...salad just not for me today...I wanted something "warm", "hot",  "spicy" (I love spicy food), and "quick" (super, super hungry...I was starving...really, really need to eat "right now")

Eggplant and kale stir fry (no oil)

Eggplant, kale, cannellini bean(cooked), frozen corn, black-eyed bean(cooked), and onion

saute onion with water for 1-2 minutes
add eggplant, cook covered until eggplant is tender and soft
add cannellini beans, frozen corn, and black-eyed beans
Stir in 1 tsp Bragg fluid aminos, onion powder, garlic powder, Bragg organic sea kelp delight seasoning
stir in kale and cook for 1-2 minutes, or until kale is tender, but crisp (I like it crisp)
top with paprika, hot chili sauce, and white sesame seed 
serve immediately

Quinoa salad with veggies...

I love quinoa...quinoa pronounced "Keen-wah".  
Good source of protein, calcium, and iron...

For some reasons, I love dark red/black quinoa better than whilte...it has more texture combination and somehow crunch feeling...

I love having quinoa with salad...super duper yum...

Quinoa salad 

red quinoa, green onions, onion, carrots, apple, green pepper, and cilantro

lemon cilantro dressing (no oil, no salt):

lemon, cilantro, apple juice, garlic powder, onion powder, chili sauce (tobasco) if you like spicy, white wine vinegar, dates

Food: Green salad with Spirulina dressing


I love Spirulina and Chlorella...the color of dark green excites me...Spirulina is a blue-green algae...superfood...

I add Spirulina and/or Chlorella to green smoothie, salad dressing...and to oatmeal...I know, sounds disgusting, yucky gross...but, for some reason, it tastes sweet to me...

Today, we will have some fun with Spirulina dressing...

Green salad with Spirulina dressing

romaine lettuce, chickpeas, edamame, tomatoes, onion and corn

Spirulina dressing (no oil):

Spirulina (powder), white wine vinegar, dates, paprika, light yellow miso

Sweet.....and enjoy...
